Spicy Peanut Noodles

This tasty noodle salad turns into a substantial meal with the addition of cooked shredded chicken.

Cooking Time: 2

Servings: 15 minutes

Ingredients: • 10 oz. spaghetti

• ½ cup creamy peanut butter

• ¾ cup hot water

• 1/3 cup low-sodium soy sauce

• 1 tbsp. grated ginger

• ¼ cup diced scallions

• 2 tbsp. white sugar

• 1 cup shredded cooked chicken

• ½ cup chopped cilantro

• ½ cup chopped peanuts

Directions:

1. Add three cups of salted water to a Dutch oven and cook the spaghetti until done, about 10 minutes.

2. Drain any remaining water.

3. Combine the peanut butter and water in a bowl and stir until smooth.

4. Add all remaining ingredients and combine well.

5. Stir the sauce into the pasta and add the shredded chicken.

6. Cook for 5 minutes while frequently stirring.

7. Transfer the pasta to a bowl and top with cilantro and chopped peanuts.

8. This dish can be eaten hot or cold.
